味极咸肉炒豆角[15P]
一道美味的菜式,豆角炒肉被很多广东人戏称为“乱棍打死猪八戒”,还挺贴切的。。。。。。

豆角洗净切段,入油盐水中汆烫,再捞起过冷河(就是从开水中捞起后马上用冷水冷却)后备用,这样可以令豆角保持青绿

热锅下油,将肉入锅大火爆炒,炒至干身且金黄色后先装起,用油炸的话效果更好,可令肉更香酥

用姜、蒜爆香起锅,再放入豆角翻炒,再放入肉和红椒丝翻炒,最后放酱油和糖调味(在下做菜从不用味精、鸡精等),再放入葱段快速翻炒几下就可以装盘上菜了

用五花肉做起来才来本来就很香 再配上喜欢油的豆角应该是很不错的
