芋頭去皮後切條,紅蔥頭去頭尾與外層髒皮後切片,豬五花肉切絲,乾香菇泡水後擠乾水分切絲備用(老鍋的芋頭米粉是純米米粉加上芋頭泥,所以本身就已有芋頭的營養和淡淡的芋頭紫色) [+yuzC(u

取一鍋,加水約7分滿煮開後,放入芋頭米粉煮至散開後,馬上取出裝入容器中,並蓋上蓋子悶著。(這是之前電視上看阿基師介紹讓米粉Q彈的作法)(我把煮好的米粉用大同電鍋的內鍋裝著,再用內鍋的蓋子蓋著非常好用)

取一炒鍋,不加油放入五花肉絲後,開中小火煸炒至豬油出來,豬肉絲都變色後,放入紅蔥頭炒至香味出來,再放入香菇絲炒至香味出來。8I@5m1qt9Y

紅蔥頭與香菇的香味都出來後,放入芋頭絲炒到芋頭香味出來,並且加入醬油與白胡椒粉炒香。(之前本來不打算那麼早讓小朋友吃胡椒粉,後來保母說白胡椒粉可以去身體的寒氣/濕氣,所以這次就加了)
